Crab Rarebit

For anyone who loves a rarebit we have the perfect dish for you, using our lightly spiced and flavoursome scotch bonnet sauce, with sweet crab and cheddar cheese.

Ingredients (Makes 1-2)

  • 1 crab
  • 2 small cornichons
  • 10g butter
  • 50g cheddar cheese
  • 20ml semi skimmed milk
  • 2 tsbp plain flour
  • 2 tbsp Scotch Bonnet Sauce
  • 1 egg


  1. Mix together the brown and white meat of a pre-cooked crab, press back into the shell, and cover with chopped cornichons.
  2. In a small pan, melt the butter, then add the grated cheese and stir until melted. Add the flour, then slowly whisk in the milk and scotch bonnet sauce until thoroughly combined, being careful not to let it split. Take off the heat for a minute or so, then add the egg, season to taste, and pour the sauce over the crab.
  3. Cook under a hot grill until puffed and golden brown, and serve with mayonnaise, crusty bread and peppery radishes.
